Our own Rose-Marie Jarry recently won the Amesbury Spartan Race elite heat, but she didn’t waste any time getting back into her kitchen and share another delicious recipe with the community!  Breakfast is arguably the most important meal of the day?  Starting off with something healthy and nutritious is the best way to ensure your day will start off right!


Beat the egg white in a big bowl with the coconut sugar. Add the milk and vanilla extract.

Mix the different flours, seeds and baking powder together in a bowl and slowly add the eggs and milk to the mix. Add the zests from the orange and mix again.

Warm up the waffle maker.

Sprinkle a little bit of Pam on the hot surface to make sure your waffles don’t stick.

When it’s warm enough, cook your waffles.

Serve with real maple syrup and fresh fruit.


These waffles can be done with any other kind of flavor. For example, instead of using the orange zests you could add some dark chocolate nibs or cut strawberries or blueberries. It’s up to you – use your imagination to create the flavor you would like to taste.

Please use real maple syrup; this will be much more beneficial to your health. If you don’t have real syrup, you should go for honey or fresh apple sauce.
