Healthy twist on a favorite comfort meal. This one is quick and easy to make too! No excuses to be healthy and full of flavorful food FAST!
Steam the Broccoli for only 5 minutes; they need to stay crunchy. Set aside.
Cook the pasta in boiling water with a pinch of sea salt in the water. Drain and keep in a warm place.
Cut the tomatoes, garlic and onion into small pieces cook in a pot on medium heat with the olive oil and the soy sauce.
Let the tomatoes cook until they are mushy. Add the goat cheese to the hot tomatoes.
Add the ground pepper and salt if you’d like too.
Serve the pasta in a plate and add a nice portion of the cheesy tomato sauce and place 2-3 big pieces of broccoli on top.
