Why not be different this morning and have a nutritious whole grain buckwheat pancake? Buckwheat is really rich in iron and fiber. If you are anemic, you should definitely try to eat more foods that are rich in iron, like buckwheat. You can find it in flour and also seeds.
Mix the coconut milk with honey, then add the rest of the ingredients. The baking powder goes in at the end.
Warm up a pan and cook the pancakes one by one. You could add the blueberries on top after cooking, or you can incorporate them into the mix while it’s cooking.
Serve with a real maple syrup.
