Cook the Quinoa if it’s not already done.

Preheat the oven at 400F.

Mix the ground pork with all the ingredients listed in the meatball section. Make sure everything holds together well. Make 12 balls, around the size of a golf ball.

Warm up a non-stick pan and cook the meatballs on one each for 5 minutes on medium heat. Remove from heat and place the pan in the oven. Cook again for 15 minutes.

While it’s cooking, prepare the tomato sauce. Blend the tomatoes, garlic and pesto together. Grill the onion and mushrooms in a pan with the coconut oil.  When it’s grilled add the blend of tomatoes in it and let it cook a little bit.

Remove the meatballs from the oven after the 15 minutes. You want to make sure they are well cooked, so cut one in half to check the inside.

Place 3 meatballs on a plate and cover the meat with the tomato sauce blend. Serve with green beans or any of your other favorite veggies.
