Cauliflower is a member of the cruciferous family. Cauliflower is rich in many nutrients. For example, it provides a good amount of vitamin C and folate. Folate helps the blood work more efficiently and is often recommended for preventing anemia. Adding the peas in the mix gets you some protein and other nutrients from the spouts.
In a pan, heat up the coconut oil and start roasting the red onion in small pieces. Add all the veggie broth and vegetables to cook. Keep only the scallions aside for the end. Cook a good 20 minutes.
When it’s cooked, blend everything together. Serve in a bowl with a tablespoon of fresh sliced scallions.
